The applications of honey in food are truly ubiquitous! In cereal baking, honey can balance bitterness and hard textures, inhibit mold growth, and serve as an effective moisturizer in gluten-free baked goods. In spicy foods, the sweetness of honey can mitigate the burning sensation and add floral and fruity notes. In high-protein foods, it can mask unpleasant odors. In beverages, honey brings natural sweetness, color, and flavor, becoming a sustainable source of energy. However, when using honey, we also need to be mindful of certain considerations. Due to honey’s sweetness being 1.5 times that of sucrose, it cannot be substituted on a 1:1 basis. Additionally, the enzymes present in honey may affect other ingredients, so caution is required in formulations.

Honey-baked goods are also beloved treats. Adding honey to bread, pastries, and cookies can increase the nutritional content and improve the quality of the products. For instance, bread baked with 6% honey is smooth, bright, soft, fragrant, and has a longer shelf life.

Honey wine and honey vinegar are beverages made by utilizing the fermentation properties of honey. Honey wine not only possesses a unique flavor but also contains abundant nutrients. Honey vinegar, on the other hand, is sweet and sour, with a pleasant taste, and contains fermented lactic acid, gluconic acid, succinic acid, and various amino acids.
