  2. Hydrogen Peroxide: Honey contains glucose oxidase, which produces hydrogen peroxide. The active oxygen released from the decomposition of hydrogen peroxide is a key component in killing microorganisms.
  3. High Osmotic Pressure: The high osmotic pressure of honey causes dehydration in microorganisms, inhibiting most types of bacteria.
  4. Viscosity: The viscosity of honey prevents oxygen from the air from entering, inhibiting aerobic bacteria.
  5. Lysozyme: Honey typically contains 5-10 mg/ml of lysozyme, an enzyme that breaks down bacterial cell walls.
  6. Flavonoids and Phenolic Compounds: Honey contains trace amounts of flavonoids, phenolic compounds, and volatile components with antibacterial properties.
These factors ensure that most bacteria cannot grow in natural mature honey, making it shelf-stable for long periods without spoilage.

Crystallization of Pure Natural Honey:

Honey crystallization occurs when glucose precipitates from the honey, forming crystals that grow and aggregate. This is a natural process and a sign of pure honey. Most genuine honey will crystallize over time, although the rate of crystallization varies. Crystallization is most likely to occur at temperatures between 13-14°C (55-57°F). Some consumers may be unfamiliar with this process and mistake crystallized honey for adulterated product. However, crystallization is a natural phenomenon where glucose forms crystals surrounded by a layer of fructose, sucrose, or dextrin, creating a solid, granular texture.
